ОБГРУНТУВАННЯ ДОЦІЛЬНОСТІ ВИКОРИСТАННЯ СТАРТОВОЇ ЗАКВАСКИ ЛВ-1 В ТЕХНОЛОГІЇ БЕЗГЛЮТЕНОВОГО РИСОВОГО ХЛІБА

Мета – обгрунтування доцільності використання стартової закваски ЛВ-1 Livendo™ в технології безглютенового рисового хліба.
Методи. В роботі використано загальноприйняті стандартні методи досліджень, які забезпечили виконання поставленого завдання. Дослідження виконано на базі виробничої лабораторії підприємства «Zeelandia», м. Бровари (ДП «Zeelandia Group», Нідерланди). Питомий об'єм хліба (см3/г) визначали шляхом ділення величини об'єму хліба на його масу і виражали з точністю до 0,01 см3/г. Об'єм хліба у см3 вимірювали за допомогою пристрою РЗ- БІО, який працює за принципом вимірювання об'єму сипучого наповнювача, витиснутого хлібом. Вологість м'якушки хліба (%) визначали експрес-методом на приладі ВЧ при 160°С протягом 5 хв (за ДСТУ 7045:2009 «Вироби хлібобулочні. Методи визначання фізико- хімічних показників»). Визначення кислотності м’якушки хліба проводилось арбітражним методом (титруванням гідроксидом натрію) за ДСТУ 7045:2009. М’якість та черствіння хліба визначали за допомогою аналізатора текстури (текстурометра) TA.Xtplus.
Результати. Обгрунтовано доцільність використання стартової закваски ЛВ1 Livendo™ в технології безглютенового рисового хліба. Доведено, що найбільш перспективною основою для приготування закваски для безглютенового хліба на основі стартеру ЛВ1 є рисове борошно. Використання рисової закваски на основі стартеру ЛВ1 в технології безглютенового рисового хліба у кількості від 30% до маси борошна є доцільним, оскільки дає можливість отримувати вироби із золотистою скоринкою, рівномірною пористістю, помірно вологою м’якушкою, вираженими приємними смаком і ароматом. Встановлено, що додавання рисової закаваски зумовлює підвіщення кіслотності рисового тіста на 2-3 град. Крім того, додавання рисової закваски у кількості 40% позитивно впливає на підйомну силу і зменшує на 15-20 хв. тривалість вистоювання тістових заготовок. Додавання 30-40% закваски дозволяє сповільнювати черствіння хліба хліба при зберіганні, проте, така кількість закваски зменшує м’якість хліба. Перспективою подальших досліджень є робота над усуненням цієї проблеми за рахунок використання певних технологічних прийомів та додаткових інредієнтів.
